Ingredients

  • 4 white fish fillets (such as cod or tilapia)
  • 1 lemon, sliced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 1 zucchini, sliced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cut 4 sheets of aluminum foil, large enough to wrap each fish fillet.

  3. Place each fish fillet on a sheet of foil.

  4. Season the fillets with salt, pepper, oregano, and thyme.

  5. Top each fillet with a few slices of lemon, minced garlic, bell pepper, onion, and zucchini.

  6. Drizzle each parcel with olive oil.

  7. Fold the foil over the fish, sealing the edges to create a tight parcel.

  8. Place the parcels on a baking sheet and bake for 20 minutes, or until the fish is cooked through and flakes easily with a fork.

  9. Carefully open the parcels and transfer the fish to plates, spooning the cooked vegetables on top.

  10. Serve hot and enjoy the delicious flavors of the Mediterranean!
