How To Make Mediterranean Fish Parcels

Ingredients
- 4 white fish fillets (such as cod or tilapia)
- 1 lemon, sliced
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 1 zucchini, sliced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Cut 4 sheets of aluminum foil, large enough to wrap each fish fillet.

Place each fish fillet on a sheet of foil.

Season the fillets with salt, pepper, oregano, and thyme.

Top each fillet with a few slices of lemon, minced garlic, bell pepper, onion, and zucchini.

Drizzle each parcel with olive oil.

Fold the foil over the fish, sealing the edges to create a tight parcel.
