  • 1 lb smoked haddock fillets
  • 2 leeks, sliced
  • 3 garlic cloves, minced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup milk
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the leeks and garlic, and sauté until softened, about 5 minutes.

  2. Sprinkle the flour over the leeks and garlic, and stir to combine. Cook for 2 minutes, stirring constantly.

  3. Slowly pour in the vegetable broth, stirring continuously to avoid any lumps. Bring to a simmer and cook for 10 minutes.

  4. Meanwhile, place the haddock fillets in a steamer basket and steam for about 5 minutes, until cooked through.

  5. Remove the haddock from the steamer and flake it into bite-sized pieces, discarding any skin or bones.

  6. Add the flaked haddock, heavy cream, and milk to the pot with the leek mixture. Stir well to combine.

  7. Season with salt and pepper to taste. Simmer for another 10 minutes, until heated through.

  8. Serve the chowder hot, garnished with fresh parsley.
