Ingredients

  • 4 chicken breasts
  • 1 tsp dried thyme
  • Salt and black pepper, to taste
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup bread crumbs
  • 2 tbsp olive oil
  • mushroom sauce:
  • 1 tbsp butter
  • 1 cup sliced mushrooms
  • 1 clove garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the chicken breasts with dried thyme, salt, and black pepper.

  3. Dredge each chicken breast in flour, dip in beaten eggs, and coat with bread crumbs.

  4. In a large skillet, heat olive oil over medium heat. Cook the chicken breasts for 3-4 minutes on each side until golden brown.

  5. Transfer the chicken breasts to a baking sheet and bake in the preheated oven for about 15-20 minutes, or until cooked through.

  6. Meanwhile, prepare the mushroom sauce. In the same skillet, melt the butter and sauté the mushrooms and minced garlic until tender.

  7. Pour in the chicken broth and let it simmer until the liquid is reduced by half.

  8. Stir in the heavy cream and cook for another 3-4 minutes until the sauce thickens.

  9. Season with salt and black pepper to taste.

  10. Serve the crispy thyme chicken with mushroom sauce poured over the top.

  11. Garnish with fresh parsley.
