How To Make Baked Egg in Spinach Nest

Baked eggs nestled in a bed of sautéed spinach, topped with cheese and baked to perfection.

Ingredients

  • 4 cups fresh baby spinach
  • 1 tablespoon olive oil
  • 4 eggs
  • Salt and pepper, to taste
  • 1/4 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F. Grease 4 ramekins with cooking spray.

  2. In a large sauté pan, heat olive oil over medium-high heat. Add spinach and cook until wilted. Season with salt and pepper.

  3. Divide spinach evenly among ramekins, forming a well in the center of each.

  4. Crack an egg into each well. Sprinkle with additional salt and pepper.

  5. Top each egg with shredded cheddar cheese.

  6. Place ramekins on a baking sheet and bake in preheated oven for 12-15 minutes, until egg whites are set and yolks are cooked to desired doneness.
