How To Make Ham & Mushroom Potato Nests with Fried Quail’s Eggs
Eggs for breakfast. Need we say more? There’s no denying that this ingredient is a staple in most people’s morning diets. There’s a good reason behind it, too. Aside from being protein and nutrient-packed, you don’t need to do much in order to make them taste delicious! You can make do with a simple sunny-side up, scrambled, or boiled rendition for regular days. There are also several ways of sprucing them up! Ingredients
- 4 medium-sized potatoes, peeled and grated
- 1 cup of cooked ham, diced
- 1 cup of mushrooms, sliced
- 1 tablespoon of butter
- Salt and pepper to taste
- 8 quail’s eggs
- Fresh chives, chopped (for garnish)
Instructions

Preheat oven to 180°C (350°F). Grease a muffin tin with non-stick spray.

In a large bowl, combine grated potatoes, salt, and pepper. Mix well.

Divide the potato mixture among the prepared muffin tin, pressing it against the sides to form nests.

Bake the potato nests for 15-20 minutes until golden brown and crispy.

In a frying pan, melt butter over medium heat. Add diced ham and sliced mushrooms. Cook until mushrooms are tender.

In a separate non-stick pan, fry quail’s eggs to your desired doneness.

Remove the potato nests from the oven and fill each nest with the ham and mushroom mixture.

Top each nest with a fried quail’s egg.

Garnish with chopped fresh chives.
