Ingredients

  • 4 courgettes, sliced
  • 4 tomatoes, sliced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (180°C fan).

  2. In a large baking dish, layer the sliced courgettes, tomatoes, onions, and minced garlic.

  3. In a small bowl, combine the grated cheddar cheese, Parmesan cheese, chopped basil, olive oil, salt, and pepper.

  4. Sprinkle the cheese mixture evenly over the vegetables in the baking dish.

  5. Bake in the preheated oven for 30 minutes or until the top is crispy and golden brown.

  6. Remove from the oven and let it cool for a few minutes before serving.
