How To Make Baked Mediterranean Chicken Recipe
A flavorful and healthy chicken recipe with Mediterranean flavors of lemon, garlic, and oregano.

Ingredients
- 4 chicken breasts
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 cup cherry tomatoes, halved
- 1/2 red onion, sliced
- 1/4 cup kalamata olives, pitted and chopped
- 1/4 cup crumbled feta cheese
- Fresh parsley, chopped, for garnish
Instructions

Preheat oven to 400°F.

Season chicken breasts with salt and pepper and place in a baking dish.

In a small bowl, whisk together minced garlic, lemon juice and zest, olive oil, and oregano.

Pour the mixture over the chicken and toss to coat.

Add cherry tomatoes, red onion, and kalamata olives to the dish, and toss to combine.
