Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 4 cups fresh spinach leaves
  • 1/2 cup chicken broth
  • 2 tbsp lemon juice
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. In a small bowl, mix together the garlic powder, paprika, dried thyme, salt, and black pepper. Rub this mixture all over the chicken breasts.

  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 5-6 minutes on each side, or until they are cooked through and golden brown. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the diced onion and minced garlic. Cook for 2-3 minutes, until the onion is translucent and fragrant.

  4. Add the spinach leaves to the skillet and cook for 2-3 minutes, until they are wilted.

  5. Pour in the chicken broth and lemon juice. Stir well and bring the mixture to a simmer. If desired, add the red pepper flakes for a spicy kick.

  6. Return the cooked chicken breasts to the skillet and let them simmer in the spinach mixture for another 5 minutes, allowing the flavors to meld together.
