Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups fresh spinach leaves
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for topping

Instructions

  1. Season the chicken breasts with salt and pepper.

  2. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned on both sides. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the diced onion and minced garlic. Cook until the onion is softened.

  4. Add the spinach leaves to the skillet and cook until wilted.

  5. Pour in the chicken broth and bring to a simmer. Add the chicken breasts back to the skillet and simmer until cooked through.

  6. Stir in the heavy cream and cook for an additional 5 minutes, or until the sauce has thickened.

  7. Serve the creamy spinach chicken over rice or pasta, and top with grated Parmesan cheese.
