Ingredients

  • 1 unbaked pie crust
  • 1 large onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp caraway seeds
  • 4 eggs
  • 1 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375F.

  2. In a large skillet, heat olive oil over medium heat. Add onion and caraway seeds and cook, stirring occasionally, until onion is caramelized and tender, about 15-20 minutes.

  3. Meanwhile, whisk together eggs, milk, salt, and black pepper in a mixing bowl.

  4. Roll out pie crust and press into a 9-inch pie dish. Prick bottom with a fork.

  5. Spread caramelized onions over pie crust. Pour egg mixture over onions. Sprinkle with Parmesan cheese.

  6. Bake for 30-35 minutes, until center is set and top is golden brown.

  7. Let quiche cool for a few minutes before slicing and serving.
