  • 1 pre-made pie crust
  • 5 oz fresh spinach, chopped
  • 1 tbsp olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup shredded cheese (such as cheddar or gruyere)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: pinch of nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Place the pre-made pie crust into a pie dish and set aside.

  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.

  4. Add the chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.

  5. In a mixing bowl, whisk together the eggs, milk, shredded cheese, salt, pepper, and nutmeg (if using).

  6. Stir in the cooked spinach mixture until well combined.

  7. Pour the egg mixture into the prepared pie crust.

  8. Place the quiche in the preheated oven and bake for 40-45 minutes, or until the center is set and the top is golden brown.

  9. Remove from the oven and let cool for a few minutes before slicing and serving.
