Ingredients

  • 1 small green papaya, peeled and thinly sliced
  • 1 large carrot, peeled and julienned
  • 1 red bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped roasted peanuts
  • 1 stalk lemongrass, tough outer layer removed and thinly sliced
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil

Instructions

  1. In a large bowl, combine the green papaya, carrot, red bell pepper, red onion, cilantro, mint, and peanuts.

  2. In a small bowl, whisk together the lemongrass, lime juice, fish sauce, honey, and vegetable oil.

  3. Pour the dressing over the salad and toss to coat.

  4. Serve chilled.
