How To Make Zesty Carrot & Ginger Loaf
A flavorful and tangy carrot loaf with a hint of ginger.

Ingredients
- 1 ½ cups grated carrots
- 1 cup all-purpose flour
- ½ cup brown sugar
- ¼ cup vegetable oil
- 2 eggs
- 1 tsp baking powder
- 1 tsp ground ginger
- ½ tsp cinnamon
- ¼ tsp salt
- ¼ cup chopped walnuts (optional)
- Zest of 1 orange
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

In a large bowl, whisk together the eggs, brown sugar, and vegetable oil until well combined.

Add the grated carrots and orange zest to the bowl and mix well.

In a separate bowl, combine the flour, baking powder, ground ginger, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

Fold in the chopped walnuts, if desired.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
