How To Make Veggie Loaf

Ingredients
- 2 cups grated zucchini
- 1 cup grated carrot
- 1 cup cooked quinoa
- 1/2 cup diced onion
- 1/4 cup chopped bell pepper
- 1/4 cup chopped mushrooms
- 1/4 cup chopped spinach
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 2 tbsp nutritional yeast
- 1 tbsp soy sauce
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 350°F (175°C) and lightly grease a loaf pan.

In a large mixing bowl, combine the grated zucchini, carrot, cooked quinoa, onion, bell pepper, mushrooms, spinach, garlic, breadcrumbs, nutritional yeast, soy sauce, dried oregano, dried thyme, salt, and pepper. Mix well until everything is evenly combined.

Transfer the mixture into the greased loaf pan and press it down firmly.

Bake in the preheated oven for 45 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool for a few minutes before slicing and serving.
