How To Make Warm Chickpea Salad

Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh mint, chopped
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- 1 clove of garlic, minced
- 1 teaspoon of ground cumin
- Salt and pepper to taste
Instructions

In a large skillet, heat the olive oil over medium heat. Add the chickpeas and cook for 5-7 minutes, until they start to brown slightly.

In a bowl, combine the red bell pepper, cucumber, red onion, parsley, and mint.

In a small bowl, whisk together the lemon juice, garlic, cumin, salt, and pepper.

Add the warm chickpeas to the bowl with the vegetables. Pour the dressing over the salad and toss to combine.
