How To Make Warm Chickpea, Chilli & Feta Salad

Serves:

Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 1 red chili, finely chopped
  • 150g feta cheese, crumbled
  • 1 red onion, thinly sliced
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Handful of fresh parsley, chopped

Instructions

  1. In a large pan, heat the olive oil over medium heat. Add the chickpeas and cook for 5 minutes, stirring occasionally.

  2. Add the chopped chili and red onion to the pan and cook for another 3 minutes.

  3. Remove from heat and transfer the chickpeas to a serving bowl.

  4. Add the crumbled feta cheese, lemon juice, and chopped parsley to the bowl. Season with salt and pepper.

  5. Toss everything together until well combined.

  6. Serve warm and enjoy!
