How To Make Warm Chickpea, Chilli & Feta Salad

Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1 red chili, finely chopped
- 150g feta cheese, crumbled
- 1 red onion, thinly sliced
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Handful of fresh parsley, chopped
Instructions

In a large pan, heat the olive oil over medium heat. Add the chickpeas and cook for 5 minutes, stirring occasionally.

Add the chopped chili and red onion to the pan and cook for another 3 minutes.

Remove from heat and transfer the chickpeas to a serving bowl.

Add the crumbled feta cheese, lemon juice, and chopped parsley to the bowl. Season with salt and pepper.

Toss everything together until well combined.

Serve warm and enjoy!
