How To Make Bean, Chickpea & Feta Salad

Ingredients
- 1 can of kidney beans, drained and rinsed
- 1 can of chickpeas, drained and rinsed
- 1 cup of cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cucumber, diced
- 1/4 cup of kalamata olives, halved
- 1/4 cup of crumbled feta cheese
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

In a large bowl, combine the kidney beans, chickpeas, cherry tomatoes, red onion, cucumber, kalamata olives, and feta cheese.

In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.

Pour the dressing over the bean mixture and toss well to combine.

Garnish with fresh parsley.
