How To Make Vegetarian Crockpot Stew Recipe

Ingredients
- 1 can of chickpeas, drained (15 oz)
- 2 medium potatoes, peeled and diced
- 2 medium carrots, peeled and sliced
- 1 small onion, chopped
- 1 red bell pepper, diced
- 2 cloves of garlic, minced
- 1 can of diced tomatoes (14.5 oz)
- 4 cups of vegetable broth
- 1 tsp of dried thyme
- 1 tsp of dried rosemary
- Salt and black pepper to taste
Instructions

In a crockpot, combine the chickpeas, potatoes, carrots, onion, bell pepper, garlic, diced tomatoes, vegetable broth, thyme, rosemary, salt and black pepper. Stir well to combine.

Cover and cook on low for 6 hours or until the vegetables are tender.
