How To Make Vegetarian Crockpot Stew Recipe

Ingredients

  • 1 can of chickpeas, drained (15 oz)
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, peeled and sliced
  • 1 small onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 can of diced tomatoes (14.5 oz)
  • 4 cups of vegetable broth
  • 1 tsp of dried thyme
  • 1 tsp of dried rosemary
  • Salt and black pepper to taste

Instructions

  1. In a crockpot, combine the chickpeas, potatoes, carrots, onion, bell pepper, garlic, diced tomatoes, vegetable broth, thyme, rosemary, salt and black pepper. Stir well to combine.

  2. Cover and cook on low for 6 hours or until the vegetables are tender.

  3. Serve hot and enjoy!
