How To Make Vegetarian Lentil Soup Recipe
A satisfying and hearty soup made with lentils, vegetables, and warming spices.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 4 cups vegetable broth
- 1 cup dried green lentils
- 1 can diced tomatoes
- salt and pepper to taste
- chopped fresh parsley for garnish
Instructions

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and garlic and cook until softened.

Add the diced carrots and celery and cook for a few more minutes until they start to soften.

Add the cumin and coriander and stir to coat the vegetables.

Pour in the vegetable broth and lentils. Bring to a boil, then reduce heat and simmer for 30-35 minutes or until the lentils are tender.

Add the can of diced tomatoes, salt, and pepper to taste. Simmer for another 5-10 minutes.

Serve hot, garnished with chopped fresh parsley.
