How To Make Vegetarian Lentil Soup Recipe

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 4 cups vegetable broth
  • 1 cup dried green lentils
  • 1 can diced tomatoes
  • salt and pepper to taste
  • chopped fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the chopped onion and garlic and cook until softened.

  3. Add the diced carrots and celery and cook for a few more minutes until they start to soften.

  4. Add the cumin and coriander and stir to coat the vegetables.

  5. Pour in the vegetable broth and lentils. Bring to a boil, then reduce heat and simmer for 30-35 minutes or until the lentils are tender.

  6. Add the can of diced tomatoes, salt, and pepper to taste. Simmer for another 5-10 minutes.

  7. Serve hot, garnished with chopped fresh parsley.
