How To Make Vegetarian Oatmeal Recipe
A hearty and flavorful oatmeal recipe packed with vegetables and spices.

Ingredients
- 2 cups rolled oats
- 4 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 1/2 cup chopped fresh parsley
- 1/4 cup nutritional yeast (optional)
Instructions

In a large pot, heat the olive oil over medium heat.

Add the onion and garlic and sauté until softened.

Add the red bell pepper, zucchini, smoked paprika, salt, and black pepper. Cook for 5 minutes until vegetables start to soften.

Add the rolled oats and vegetable broth. Stir well.

Bring the mixture to a boil, then reduce heat and let simmer for 15 minutes.

Stir in the fresh parsley and nutritional yeast (if using). Serve hot.
