Ingredients

  • 2 cups of rolled oats
  • 4 cups of water
  • 1 cinnamon stick
  • 1/4 cup of coconut milk
  • 1/4 cup of brown sugar
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of vanilla extract
  • Fresh fruit for topping

Instructions

  1. In a medium saucepan, bring the water to a boil.

  2. Add the rolled oats and cinnamon stick to the boiling water. Reduce heat to low and simmer for 10-15 minutes, stirring occasionally.

  3. Stir in the coconut milk, brown sugar, salt, and vanilla extract. Cook for an additional 2-3 minutes until the oatmeal thickens.

  4. Remove the cinnamon stick from the oatmeal.

  5. Serve the oatmeal hot, topped with fresh fruit of your choice.
