- 2 cups of rolled oats
- 4 cups of water
- 1 cinnamon stick
- 1/4 cup of coconut milk
- 1/4 cup of brown sugar
- 1/4 teaspoon of salt
- 1/4 teaspoon of vanilla extract
- Fresh fruit for topping
Instructions

In a medium saucepan, bring the water to a boil.

Add the rolled oats and cinnamon stick to the boiling water. Reduce heat to low and simmer for 10-15 minutes, stirring occasionally.

Stir in the coconut milk, brown sugar, salt, and vanilla extract. Cook for an additional 2-3 minutes until the oatmeal thickens.

Remove the cinnamon stick from the oatmeal.
