How To Make Vegetarian Breakfast Quesadilla Recipe
This is a protein-packed, cheesy, and veggie-filled breakfast quesadilla that is perfect for a quick and healthy morning meal!

Ingredients
- 4 large tortillas
- 1 cup of shredded cheddar cheese
- 1 bell pepper, chopped
- 1 small red onion, chopped
- 4 large eggs
- 1/4 cup of milk
- Salt and pepper to taste
- Cooking spray
Instructions

Heat a large skillet over medium heat and spray with cooking spray.

Add the chopped bell pepper and red onion and sauté until softened, about 5 minutes. Remove from skillet and set aside.

In a small bowl, whisk together the eggs, milk, salt, and pepper.

In the same skillet, pour the egg mixture and cook until scrambled, about 3-4 minutes. Remove from skillet and set aside.

Take one tortilla and sprinkle 1/4 cup of shredded cheddar cheese onto half of the tortilla.

Add some of the sautéed veggies and scrambled eggs onto the cheese side of the tortilla.

Fold the other half of the tortilla over the filling, creating a half-moon shape.

Repeat with the remaining tortillas and filling.

Heat a clean skillet over medium heat and spray with cooking spray.

Cook each quesadilla for 2-3 minutes per side, or until golden brown and the cheese has melted.

Remove from skillet, slice and serve hot.
