Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 8 small flour tortillas
  • 1 cup grated cheddar cheese
  • 1/2 cup crumbled cooked chorizo
  • 1/4 cup chopped fresh cilantro
  • Sour cream and salsa, for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Place the diced sweet potatoes on a baking sheet and drizzle with olive oil. Sprinkle with chili powder, smoked paprika, salt, and pepper. Toss to coat evenly.

  2. Roast the sweet potatoes in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized.

  3. Heat a skillet over medium heat. Place one tortilla in the skillet and sprinkle with half of the grated cheddar cheese. Top with half of the roasted sweet potatoes, chorizo, and chopped cilantro. Place another tortilla on top.

  4. Cook the quesadilla for 2-3 minutes per side, or until the cheese is melted and the tortillas are crispy. Repeat with the remaining ingredients to make a second quesadilla.

  5. Cut the quesadillas into wedges and serve with sour cream and salsa.
