Ingredients
- 4 large flour tortillas
- 8 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup diced cooked bacon
- 2 tbsp butter
Instructions

In a bowl, whisk together eggs, milk, salt, and black pepper.

Heat butter in a large skillet over medium heat.

Add diced bell peppers and onions to the skillet and cook until softened.

Pour the egg mixture into the skillet and scramble until cooked through.

Remove the eggs from the skillet and set them aside.

Place a tortilla in the skillet and top with a quarter of the scrambled eggs, shredded cheese, and diced bacon.

Cover with another tortilla and press down gently.

Cook until the bottom tortilla is crispy and golden brown, then flip and cook the other side.

Repeat with the remaining tortillas and fillings.

Cut the quesadillas into quarters and serve warm.
