How To Make Vegetarian Breakfast Casserole Recipe
A delicious and healthy way to start your day off right. This breakfast casserole is packed with protein and veggies.

Ingredients
- 6 slices of whole wheat bread, cubed
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 cups of fresh spinach
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- ½ cup of grated cheddar cheese
- ¼ cup of grated parmesan cheese
- 6 large eggs
- 1 ½ cups of milk
- 1 tsp of salt
- ½ tsp of black pepper
Instructions

Preheat oven to 375°F.

Heat the olive oil in a skillet over medium heat and sauté the onion and garlic until soft and fragrant.

Add the spinach, red bell pepper, and green bell pepper to the skillet and cook for another 2 to 3 minutes.

In a large bowl, whisk together the eggs, milk, salt, and black pepper.

Add the bread cubes to the bowl and mix well.

Add the sautéed vegetables and half of the grated cheese to the bowl and stir.

Pour the mixture into a greased casserole dish and sprinkle with the remaining cheese.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for another 15 minutes or until the casserole is golden brown and cooked through.

Allow the casserole to cool for a few minutes before serving.
