Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 zucchini, diced
  • 1 cup corn kernels
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and minced garlic, sauté until softened.

  2. Add diced bell peppers, zucchini, and corn kernels to the pot. Cook for 5 minutes, until vegetables are slightly tender.

  3. Stir in diced tomatoes, kidney beans, black beans, chili powder, cumin, paprika, salt, and pepper. Bring to a simmer and let it cook for 30 minutes, allowing the flavors to meld together.

  4. Serve hot with optional toppings like shredded cheese, sour cream, and chopped cilantro. Enjoy!
