How To Make Vegetable & Bean Chilli

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 zucchini, diced
- 1 cup corn kernels
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions

Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and minced garlic, sauté until softened.

Add diced bell peppers, zucchini, and corn kernels to the pot. Cook for 5 minutes, until vegetables are slightly tender.

Stir in diced tomatoes, kidney beans, black beans, chili powder, cumin, paprika, salt, and pepper. Bring to a simmer and let it cook for 30 minutes, allowing the flavors to meld together.
