  • 8 eggs
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon black pepper powder
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • Optional toppings: chopped herbs (such as cilantro or parsley), feta cheese

Instructions

  1. In a bowl, whisk together the eggs, turmeric powder, black pepper powder, and salt until well combined.

  2. Heat olive oil in a non-stick skillet over medium heat.

  3. Pour the egg mixture into the skillet and let it cook undisturbed for a few seconds until it starts to set around the edges.

  4. Using a spatula, gently push the cooked edges towards the center, allowing the uncooked eggs to flow to the edges of the skillet.

  5. Continue cooking, gently stirring and folding the eggs, until they are softly set but still slightly runny in the center.

  6. Remove from heat and let the residual heat continue to cook the eggs to your desired consistency.

  7. Serve hot with optional toppings like chopped herbs or crumbled feta cheese.
