How To Make Creamy tomato mascarpone gnocchi recipe

Ingredients
- 500g gnocchi
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 400g canned diced tomatoes
- 200g mascarpone cheese
- 1 tsp dried basil
- salt and pepper to taste
- grated Parmesan cheese, for garnish
- fresh basil leaves, for garnish
Instructions

Cook the gnocchi according to the package instructions. Drain and set aside.

Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and cook until softened.

Add the canned diced tomatoes and dried basil to the skillet. Season with salt and pepper.

Simmer the tomato sauce for about 10 minutes, until it thickens slightly.

Reduce the heat to low and stir in the mascarpone cheese until smooth and creamy.

Add the cooked gnocchi to the skillet and toss to coat in the creamy tomato sauce.

Cook for an additional 2-3 minutes, until the gnocchi is heated through.
