How To Make Sweet Potato & Parsnip Bake

Ingredients
- 2 sweet potatoes, peeled and sliced
- 2 parsnips, peeled and sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/4 cup grated Parmesan cheese
Instructions

Preheat the oven to 375°F (190°C). Grease a baking dish.

In a large bowl, toss the sweet potatoes and parsnips with olive oil, salt, pepper, thyme, and garlic powder until well coated.

Transfer the mixture to the greased baking dish and spread it out evenly.

Bake for 40-45 minutes, or until the vegetables are tender and golden brown.

Sprinkle the grated Parmesan cheese over the top and return to the oven for another 5 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let it cool for a few minutes before serving.
