How To Make Root Vegetable and Kale Hash

A hearty and healthy dish loaded with root vegetables and kale, perfect for breakfast or brunch.

Ingredients

  • 2 tbsp olive oil
  • 1 large sweet potato, peeled and diced
  • 2 parsnips, peeled and diced
  • 2 carrots, peeled and diced
  • 1 large onion, diced
  • 4 cloves of garlic, minced
  • 1 bunch of kale, stems removed and chopped
  • 1 tbsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sweet potato, parsnip, and carrot and cook for 10 minutes, stirring occasionally.

  2. Add onion and garlic and continue to cook for 5 more minutes.

  3. Stir in chopped kale and smoked paprika and cook until kale is wilted.

  4. Season with salt and pepper to taste and serve hot.
