How To Make Summer Berry Brulée

- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 4 tbsp granulated sugar
- 4 tbsp brown sugar
- 4 large egg yolks
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1/4 cup turbinado sugar (for caramelizing)
Instructions

Preheat the oven to 350°F (175°C). Place the mixed berries in an oven-safe dish.

In a mixing bowl, whisk together the granulated sugar, brown sugar, egg yolks, and vanilla extract until well combined.

Heat the heavy cream in a saucepan over medium heat until it begins to simmer.

Slowly pour the heated cream into the egg mixture, whisking constantly.

Pour the custard mixture over the berries in the dish.

Place the dish in a larger baking pan filled with hot water. Bake for 25 minutes or until the custard is set.

Remove the dish from the oven and let it cool slightly. Refrigerate for at least 2 hours.

Sprinkle turbinado sugar evenly over the chilled custard. Use a kitchen torch to caramelize the sugar until it forms a crispy top layer.
