Ingredients

  • 2 cups mashed cooked squash
  • 1 egg
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • sauce of your choice (e.g. marinara, pesto, butter)

Instructions

  1. In a large bowl, mix the mashed squash, egg, flour, and salt until a dough forms.

  2. Divide the dough into small portions and roll each portion into a rope.

  3. Cut the rope into small pieces and use a fork to make ridges on each piece.

  4. Bring a large pot of salted water to a boil and cook the gnocchi until they float to the surface, about 2-3 minutes.

  5. Drain the gnocchi and toss them with your favorite sauce.

  6. Serve hot and enjoy!
