How To Make Creamy Baked Gnocchi with Squash & Spinach

Ingredients
- 1 lb of gnocchi
- 2 cups of butternut squash, diced
- 2 cups of spinach
- 1 cup of heavy cream
- 1 cup of grated Parmesan cheese
- 2 cloves of garlic, minced
- 1 tbsp of olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Cook the gnocchi according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant.

Add the butternut squash and sauté until fork-tender, about 10 minutes. Season with salt and pepper.

Add the cooked gnocchi and spinach to the skillet. Cook until the spinach wilts.

Pour in the heavy cream and stir in half of the Parmesan cheese. Season with salt and pepper.

Transfer the mixture to a baking dish and sprinkle the remaining Parmesan cheese on top.

Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.
