How To Make Spinach & Ricotta Gnocchi

Ingredients
- 2 cups ricotta cheese
- 1 cup cooked spinach, squeezed and chopped
- 1 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups all-purpose flour
- 1/2 cup unsalted butter
- 1/4 cup grated Parmesan cheese (for garnish)
- Fresh parsley (for garnish)

In a large bowl, mix together the ricotta cheese, cooked spinach, grated Parmesan cheese, garlic powder, salt, and black pepper until well combined.

Gradually add the flour to the mixture, stirring until a soft dough forms. The dough should be slightly sticky but manageable.

Divide the dough into small portions and roll each portion into a long rope shape, about 1/2 inch in diameter.

Cut the ropes into bite-sized pieces and place them on a floured baking sheet or tray.

Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook for about 2-3 minutes, or until they float to the surface.

While the gnocchi is cooking, melt the butter in a large skillet over medium heat. Add the cooked gnocchi and sauté for 3-4 minutes, until they are lightly golden.

Serve the spinach and ricotta gnocchi with a sprinkle of grated Parmesan cheese and fresh parsley on top.
