How To Make Spinach & Ricotta Gnocchi

Ingredients

  • 2 cups ricotta cheese
  • 1 cup cooked spinach, squeezed and chopped
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter
  • 1/4 cup grated Parmesan cheese (for garnish)
  • Fresh parsley (for garnish)

Instructions

  1. In a large bowl, mix together the ricotta cheese, cooked spinach, grated Parmesan cheese, garlic powder, salt, and black pepper until well combined.

  2. Gradually add the flour to the mixture, stirring until a soft dough forms. The dough should be slightly sticky but manageable.

  3. Divide the dough into small portions and roll each portion into a long rope shape, about 1/2 inch in diameter.

  4. Cut the ropes into bite-sized pieces and place them on a floured baking sheet or tray.

  5. Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook for about 2-3 minutes, or until they float to the surface.

  6. While the gnocchi is cooking, melt the butter in a large skillet over medium heat. Add the cooked gnocchi and sauté for 3-4 minutes, until they are lightly golden.

  7. Serve the spinach and ricotta gnocchi with a sprinkle of grated Parmesan cheese and fresh parsley on top.
