How To Make Roast Rack of Pork with Wild Garlic Stuffing

Ingredients
- 1 rack of pork
- 2 cups of wild garlic
- 1 cup breadcrumbs
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- Olive oil
Instructions

Preheat the oven to 375°F (190°C).

In a bowl, mix together the wild garlic, breadcrumbs, onion, garlic, thyme, salt, and pepper.

Cut a slit in the center of the pork rack to create a pocket for the stuffing.

Stuff the wild garlic mixture into the pocket of the pork rack.

Rub the pork rack with olive oil, salt, and pepper.

Place the pork rack on a roasting pan and roast in the preheated oven for 1 hour 30 minutes, or until the internal temperature reaches 145°F (63°C).

Allow the pork to rest for 10 minutes before slicing.

Serve the roast rack of pork with the wild garlic stuffing.
