How To Make Rolled Pork Belly with Herby Apricot & Honey Stuffing

Ingredients
- 1 kg pork belly, skin on
- 1 cup dried apricots, chopped
- 1/2 cup fresh breadcrumbs
- 1/4 cup fresh parsley, chopped
- 2 tbsp honey
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

Using a sharp knife, score the pork belly skin in a criss-cross pattern.

In a bowl, mix together the dried apricots, breadcrumbs, parsley, honey, thyme, rosemary, salt, and pepper.

Lay the pork belly skin-side down and spread the stuffing mixture evenly over the meat.

Roll up the pork belly tightly and secure with kitchen twine.

Place the rolled pork belly on a baking tray and roast in the preheated oven for 2 hours or until the meat is tender and the skin is crispy.

Allow the pork belly to rest for 10 minutes before slicing. Serve hot.
