How To Make Rolled Pork Belly with Herby Apricot & Honey Stuffing

Ingredients

  • 1 kg pork belly, skin on
  • 1 cup dried apricots, chopped
  • 1/2 cup fresh breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp honey
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Using a sharp knife, score the pork belly skin in a criss-cross pattern.

  3. In a bowl, mix together the dried apricots, breadcrumbs, parsley, honey, thyme, rosemary, salt, and pepper.

  4. Lay the pork belly skin-side down and spread the stuffing mixture evenly over the meat.

  5. Roll up the pork belly tightly and secure with kitchen twine.

  6. Place the rolled pork belly on a baking tray and roast in the preheated oven for 2 hours or until the meat is tender and the skin is crispy.

  7. Allow the pork belly to rest for 10 minutes before slicing. Serve hot.
