How To Make Spiced ‘chorizo’ pastry slices

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 1 sheet of puff pastry
  • 1 tbsp olive oil
  • 1/2 red onion, diced
  • 1 clove of garlic, minced
  • 1 tsp ground paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/4 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup vegetarian ‘chorizo’ crumbles
  • 1/4 cup chopped fresh cilantro
  • 1 egg, beaten (for egg wash)
  • Sesame seeds, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Heat the olive oil in a skillet over medium heat. Add the diced red onion and minced garlic, and cook until softened.

  3. In a small bowl, mix together the ground paprika, ground cumin, cayenne pepper, dried oregano, salt, and black pepper.

  4. Add the vegetarian ‘chorizo’ crumbles to the skillet and sprinkle the spice mixture over them. Cook for 2-3 minutes, stirring occasionally, until heated through and well coated in the spices.

  5. Roll out the puff pastry sheet on a lightly floured surface. Cut the pastry into 4 equal rectangles.

  6. Place a spoonful of the spiced ‘chorizo’ filling onto one half of each pastry rectangle. Sprinkle with chopped fresh cilantro. Fold the other half of the pastry over the filling and press the edges together to seal.

  7. Transfer the filled pastry slices onto the prepared baking sheet. Brush the tops with beaten egg and sprinkle with sesame seeds.

  8. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and crispy.

  9. Remove from the oven and let cool for a few minutes before serving. Enjoy!
