How To Make Soufflé Mac ‘n’ Cheese

Ingredients
- 2 cups elbow macaroni
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 eggs, separated
Instructions

Preheat the oven to 375°F (190°C) and butter a 9×9 inch baking dish.

Cook the macaroni according to package instructions until al dente. Drain and set aside.

In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes, until lightly golden.

Gradually whisk in the milk and cook, stirring constantly, until thickened and smooth.

Remove the saucepan from heat and stir in the shredded cheese until melted and smooth. Season with salt and black pepper.

In a separate bowl, beat the egg yolks until thick and pale yellow. Gradually whisk the yolk mixture into the cheese sauce.

In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cheese sauce.

Fold in the cooked macaroni until evenly coated with the cheese mixture.

Transfer the mixture to the prepared baking dish and smooth the top with a spatula.

Bake for 25-30 minutes, or until the top is puffed and golden brown.
