How To Make Smoky Veggie Nachos

Ingredients
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, diced
- 1 cup corn kernels
- 1 cup black beans, rinsed and drained
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper, to taste
- 4 cups tortilla chips
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1 jalapeno, thinly sliced
- Sour cream, for serving
- Salsa, for serving
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat some oil over medium heat. Add the bell peppers, onion, corn, and black beans. Cook until vegetables are tender, about 5 minutes.

Stir in the smoked paprika, cumin, chili powder, salt, and pepper. Cook for another minute to allow the spices to release their flavors.

Spread the tortilla chips on a baking sheet in an even layer. Top with the cooked vegetables and sprinkle with shredded cheese.

Bake in the preheated oven for 8-10 minutes or until the cheese is melted and bubbly.

Remove from the oven and garnish with chopped cilantro and sliced jalapenos. Serve with sour cream and salsa.
