Ingredients

  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 1 cup corn kernels
  • 1 cup black beans, rinsed and drained
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 4 cups tortilla chips
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno, thinly sliced
  • Sour cream, for serving
  • Salsa, for serving

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat some oil over medium heat. Add the bell peppers, onion, corn, and black beans. Cook until vegetables are tender, about 5 minutes.

  3. Stir in the smoked paprika, cumin, chili powder, salt, and pepper. Cook for another minute to allow the spices to release their flavors.

  4. Spread the tortilla chips on a baking sheet in an even layer. Top with the cooked vegetables and sprinkle with shredded cheese.

  5. Bake in the preheated oven for 8-10 minutes or until the cheese is melted and bubbly.

  6. Remove from the oven and garnish with chopped cilantro and sliced jalapenos. Serve with sour cream and salsa.
