How To Make Sicilian Potato Cake

- 4 large potatoes, peeled and thinly sliced
- 1 onion, diced
- 3 cloves of garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large eggs
Instructions

Preheat the oven to 375°F (190°C). Grease a round baking dish.

In a large bowl, combine the sliced potatoes, diced onion, minced garlic, Parmesan cheese, olive oil, oregano, salt, and black pepper. Mix well to coat the potatoes evenly.

Layer half of the potato mixture into the greased baking dish, pressing it down firmly.

Crack the eggs over the potatoes, spacing them evenly. Carefully cover the eggs with the remaining potato mixture, pressing it down firmly.

Bake in the preheated oven for 45 minutes, or until the potatoes are golden brown and cooked through.
