Ingredients

  • 250g fresh ricotta cheese
  • 100g sugar
  • 2 eggs
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tsp vanilla extract
  • 50g all-purpose flour
  • 1 tbsp cornstarch
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (180°C) and lightly grease a 9-inch (23cm) round cake pan.

  2. In a mixing bowl, beat the ricotta and sugar together until smooth and creamy.

  3. Add the eggs, lemon zest, orange zest, and vanilla extract. Mix well.

  4. Sift in the flour, cornstarch, and salt. Stir until just combined.

  5. Pour the batter into the prepared cake pan and smooth the top.

  6. Bake in the preheated oven for 50 minutes or until the cheesecake is set and golden on top.

  7. Remove from the oven and let it cool completely in the pan before refrigerating for at least 2 hours.

  8. Serve chilled and enjoy!
