How To Make Seitan & Black Bean Stir-Fry

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup seitan, thinly sliced
  • 1 cup cooked black beans
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch, dissolved in 2 tbsp water
  • 2 green onions, chopped (for garnish)
  • Cooked rice, for serving

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium heat. Add onion and garlic, and cook until softened.

  2. Add red and yellow bell peppers to the skillet and cook for 2-3 minutes until slightly tender.

  3. Stir in seitan and black beans, and cook for another 2 minutes.

  4. In a small bowl, whisk together soy sauce, sesame oil, and cornstarch mixture. Pour into the skillet and stir well to coat the ingredients.

  5. Cook for an additional 2-3 minutes until the sauce has thickened. Remove from heat.

  6. Serve the stir-fry over cooked rice and garnish with chopped green onions.
