How To Make Seitan & Black Bean Stir-Fry

Ingredients
- 1 tbsp vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup seitan, thinly sliced
- 1 cup cooked black beans
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp cornstarch, dissolved in 2 tbsp water
- 2 green onions, chopped (for garnish)
- Cooked rice, for serving
Instructions

Heat vegetable oil in a large skillet or wok over medium heat. Add onion and garlic, and cook until softened.

Add red and yellow bell peppers to the skillet and cook for 2-3 minutes until slightly tender.

Stir in seitan and black beans, and cook for another 2 minutes.

In a small bowl, whisk together soy sauce, sesame oil, and cornstarch mixture. Pour into the skillet and stir well to coat the ingredients.

Cook for an additional 2-3 minutes until the sauce has thickened. Remove from heat.

Serve the stir-fry over cooked rice and garnish with chopped green onions.
