How To Make Salsa Soup

Ingredients
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tomatoes, diced
- 1 bell pepper, diced
- 1 jalapeno pepper, diced
- 1 cup corn kernels
- 1 can black beans, rinsed and drained
- 4 cups vegetable broth
- 1 tsp cumin
- Salt and pepper to taste
- 1/4 cup cilantro leaves, chopped
- 1 lime, juiced
- 1/4 cup salsa
- Tortilla chips, for serving
Instructions

In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic, cooking until softened.

Add the diced tomatoes, bell pepper, jalapeno pepper, corn kernels, and black beans to the pot. Stir in the cumin, salt, and pepper.

Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let simmer for 20 minutes.

Remove the pot from the heat and stir in the chopped cilantro and lime juice.

Serve the salsa soup hot, topped with a dollop of salsa and some crushed tortilla chips.
