- 8 shallots, peeled and halved
- 1/2 cup pitted black olives
- 2 bay leaves
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper, to taste

Preheat the oven to 400°F (200°C).

In a baking dish, combine the shallots, olives, bay leaves, balsamic vinegar, olive oil, salt, and pepper. Toss to coat.
