  • 8 shallots, peeled and halved

  • 2 bay leaves
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a baking dish, combine the shallots, olives, bay leaves, balsamic vinegar, olive oil, salt, and pepper. Toss to coat.

  3. Roast in the preheated oven for 25 minutes, or until the shallots are tender and caramelized.

  4. Serve the roasted shallots with olives, bay, and balsamic as a delicious side dish.
