Ingredients

  • 2 cups red wine
  • 1 cup beef stock
  • 2 shallots, finely chopped
  • 2 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 2 tablespoons butter
  • Salt and black pepper, to taste

Instructions

  1. In a saucepan, melt the butter over medium heat. Add the shallots and garlic, and sauté until fragrant and translucent.

  2. Add the red wine, beef stock, thyme, and bay leaf. Bring to a simmer and cook for 40 minutes, or until the sauce has reduced by half.

  3. Remove the thyme sprigs and bay leaf from the sauce. Use an immersion blender or a regular blender to blend the sauce until smooth.

  4. Return the sauce to the heat and simmer for an additional 5-10 minutes, or until slightly thickened. Season with salt and black pepper to taste.

  5. Serve the bordelaise sauce warm over grilled steak or roasted meats.
