Ingredients

  • 1 lb gnocchi
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 425°F (220°C).

  2. In a large bowl, toss together gnocchi, mushrooms, garlic, olive oil, balsamic vinegar, thyme, salt, and pepper.

  3. Spread mixture onto a baking sheet in an even layer.

  4. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until gnocchi is golden and mushrooms are tender.

  5. Remove from oven and serve hot, sprinkled with grated Parmesan cheese and garnished with fresh parsley.
