Serves:

Ingredients

  • 2 cups cooked rice
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 carrot, grated
  • 1 cup frozen peas
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a pan over medium heat. Add onions and garlic, and sauté until fragrant.

  2. Add the diced bell peppers, grated carrot, and frozen peas. Cook for 5 minutes, until the vegetables are slightly softened.

  3. Add the cooked rice to the pan and stir well to combine. Cook for an additional 5 minutes.

  4. Stir in the soy sauce and season with salt and pepper to taste.

  5. Cook for another 5 minutes, until everything is heated through.

  6. Serve the rainbow rice hot and enjoy!
