  • 4 large tomatoes, sliced
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup fresh parsley leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced tomatoes, cherry tomatoes, bell peppers, red onion, basil, and parsley.

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

  3. Pour the dressing over the tomato mixture and toss gently to combine.

  4. Let the salad sit at room temperature for at least 10 minutes to allow the flavors to meld.
