Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • Food coloring (red, orange, yellow, green, blue, purple)
  • Vanilla frosting
  • Rainbow sprinkles

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

  3. In a large bowl, cream together butter and sugar until light and fluffy using an electric mixer.

  4. Beat in eggs one at a time, then stir in vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with milk. Mix until just combined.

  6. Divide the batter evenly into six separate bowls.

  7. Stir in a few drops of food coloring into each bowl to create rainbow-colored batter.

  8. Starting with one color, spoon a small amount of batter into each cupcake liner. Repeat with the remaining colors, layering the batter.

  9. Use a toothpick or skewer to gently swirl the colors together for a marbled effect.

  10. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.

  11. Allow cupcakes to cool completely before frosting with vanilla frosting.

  12. Decorate with rainbow sprinkles.
