How To Make Pumpkin & Bean Spaghetti

Ingredients
- 8 ounces of spaghetti
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup of canned pumpkin puree
- 1 cup of cooked white beans
- 1 teaspoon of dried sage
- Salt and pepper to taste
- Parmesan cheese, for serving
- Fresh parsley, for garnish
Instructions

Cook the spaghetti according to package instructions. Drain and set aside.

Heat the olive oil in a large pan over medium heat. Add the diced onion and minced garlic, sauté until fragrant and translucent.

Add the pumpkin puree to the pan and stir until well combined with the onions and garlic.

Stir in the cooked white beans and dried sage. Season with salt and pepper.

Add the cooked spaghetti to the pan and toss until the spaghetti is well coated in the pumpkin and bean mixture.

Cook for an additional 2-3 minutes, until everything is heated through.

Serve the pumpkin and bean spaghetti with grated Parmesan cheese and garnish with fresh parsley.
